Potato Frittata.
We boiled a few homegrown potatoes then sliced them thinly, put them into a bowl with a few beaten eggs (saved yolks and whites from a few different dishes my friends had cooked earlier,) some spinach leaves, sauteed garlic and onion and parsley and transfered that bowl full of stuff into a frying pan on the stove for a few minutes then under the grill to crisp up the top.
Served with tomato, parsley and balsamic.
