New book of preserves.
Stole this book today then went to work and read the whole thing and bookmarked lots of things I want to try. It’s very UK focused, lots about making preserves and jellies from things growing in hedgerows, now we don’t have any hedgerows in Australia so some things are really not appropriate but it’s not totally irrelevant. There are great tables of pectin and acid contents of different fruits, and lots of recipes I really want to try with things that do grow here. Some of the things I bookmarked are: apple & herb/rose jelly, fruit leathers, rosehip and apple jelly, pickled garlic, elderflower cordial, rosehip syrup, sloe gin, bachelor’s jelly (gin with fruit added as it comes in season, until a huge jar is full at the end of the year and then you stir it and you have this amazing fruity gin?!), roasted tomato passata, mulled pears, figpote (figs, honey, earl grey, orange juice!)
